Done so far:

checked latest MacOS installed: 27.2
Software update for Excel available: No (Microsoft® Excel for Mac, Version 16.114.1 (26102031)
copied Excel file to local drive from Dropbox synced folder - problem still persists
tried with other Excel files - same problem
created clean new file with a pivot table - no issue

Have beyond 100 pivot tables on vast Excel files. Unable to create all files new.

I have the same issue almost exactly. The only subtle differences (maybe) are:

I was still on v1 of Golden Gate and everything was working fine until this morning. Updating to v2 this morning didn't solve the problem ; and

for completeness I should say it's not just refreshing the pivot table that causes it to crash but changing filter options and literally doing anything with a pivot table other than just clicking on it

I spoke to MS who said it was an Apple problem because opening a new file and creating a pivot table works.
I spoke to Apple who went through a lot of steps with me - similar to the ones you detailed - and none of it helped. Ultimately they suggested I speak to MS again.

I'm experiencing the same problem. Even a small test table with 3 columns and 30-40 rows causes a crash as soon as I try creating a pivot from it.

I've been able to sidestep the issue temporarily by rolling back to Excel version 16.113.4 (26100421). This is not a long-term fix, but it will work in a pinch if you need your pivot tables now.

I had to drag /Applications/Microsoft\ Excel.app to the bin, then I downloaded the Office Suite for version 16.113.4 from https://learn.microsoft.com/en-us/officeupdates/update-history-office-for-mac and installed it.

I also turned off auto-updates in Microsoft AutoUpdate (in Excel, under Help → Check for Updates) to avoid 16.114 being installed again until a fix is released.

Same issue - all the Excel versions prior to 16.113.3 were causing Excel to crash. I installed 16.113.3 (26092714) [September 29, 2026]and also turned off automatic updates on Microsoft Autoupdate.

So far using 16.113.3, I'm able to refresh, edit, etc. pivot tables without crashing.

For reference, my Macbook is updated to macOS Golden Gate 27.2.

That works well as an interim solution, thanks for that quick fix.
